Gluten-free Gingerbread Cookies

Time to take out the festive cookie cutters (if you haven’t already done so!) and get baking in your gluten-free kitchen!

Sugar and spice and all things nice….

Gluten-free Gingerbread Cookies

(gluten-free, egg free, oat free, wheat free)

These gluten-free gingerbread cookies are rather delicate before baking, so work gently with them for best results.

 

Ingredients:

  • 3/4 cup of All purpose gluten-free flour
  • 1 flax egg
  • 1/4 cup of dark brown sugar
  • 1/4 cup of butter
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of ground ginger
  • 1/2 teaspoon of ground cinnamon
  • 1/3 cup of water infused with dried whole cloves

Instructions:

  1. Place dried whole cloves into a 1/3 cup of boiled water and let stand
  2. Place the all purpose flour, baking powder, salt, ground ginger and cinnamon into a mixing bowl
  3. Add the dark brown sugar and mix
  4. Use a fork to blend in the soft butter, until well combined
  5. Gradually add the water until a smooth batter is formed (the batter should be creamy but not runny)
  6. Lastly, fold in the flax egg
  7. Roll out the dough onto a piece of wax paper
  8. Cover with cling wrap and refrigerate for at least two hours
  9. Remove from the fridge and using a cookie cutter, cut out shapes
  10. Preheat an oven to 180C
  11. Place the cookie cut outs onto a floured baking tray
  12. If the cookies are soft, then refrigerate until firm
  13. Bake in a preheated oven for 12 – 15 minutes, until browned
  14. Remove from oven and cool until hardened
  15. Store in an airtight container

Optional: decorate cookies with chopped nuts, sprinkles and fruit before baking
