Gluten-free Cheesy Baked Cauliflower & Broccoli

Which vegetable side dish  do you like to serve with a roast chicken (or turkey)?  Which vegetable dish do you enjoy making that the whole family can tuck into, without having to make a few separate dishes?

Cauliflower and Broccoli Bake is one of my favourites ~ it goes so well when catering for a large family, or a crowd;  enjoyed by both the meat eaters and the vegetarians.

 

Gluten-free Baked Cauliflower & Broccoli

Prep time: 10 minutes

Oven time: 25 – 30 minutes

 

Ingredients:

  • 1 whole  fresh broccoli
  • 1 whole  fresh cauliflower
  • 2 cloves of fresh garlic
  • 1/4 cup of grated mozzarella cheese
  • 1 cup of thick cream
  • 1/4 cup of filtered water / vegetable stock
  • salt and pepper for seasoning
  • 1/2 teaspoon of your favourite mixed herbs and spices / paprika

 

Instructions:

  1. Cut the broccoli and cauliflower into florets (any size that you prefer), and wash
  2. Bring a pot of water to the boil
  3. Carefully place the cauliflower and broccoli into the pot and boil for about 4 minutes
  4. Carefully drain the water and set the vegetables aside
  5. Preheat an oven to 180C / 350F
  6. Grate the cheese (if not already grated)
  7. In a jug, measure out the cream
  8. Place the cauliflower, broccoli and crushed garlic into a large glass baking dish (or other)
  9. Season with salt and pepper
  10. Pour the cream over and add the 1/4 cup of water
  11. Stir gently
  12. Sprinkle the grated mozzarella cheese over
  13. Place the dish, uncovered into the centre of the preheated oven
  14. Bake 25 – 30 minutes until the vegetables are tender and the cheese is melted (leave in a little longer if you prefer the cheese browned)
  15. Carefully remove from the oven and serve
  16. Enjoy!
