Gluten-free Beef & Mini Corn Stir fry

Finally – a meaty recipe that is not chicken! So, after quite a few chicken recipes (as you’ll see, if you search on my blog, there are quite a few chicken recipes to be found!) now that summer is over, and warm meals are more welcome, I’ll start to add warming ingredients to recipes.

Time to take out your wok and make this beef stir fry – you’re sure to enjoy it!

Gluten-free Beef & Mini Corn Stir fry

Servings: 4-6

Prep time: 20 minutes

Cooking time: 15-20 minutes

 

Allergens: corn, soy, sesame

 

Ingredients:

  • 100g fresh small corn, cut in half
  • 1 small sweet pepper, sliced
  • 1 small red onion, sliced
  • 1 fresh knob of ginger, finely chopped
  • 1 fresh garlic clove, finely chopped
  • 1 teaspoon of cumin powder
  • 1/2 cup of  liquid beef / vegetable stock
  • 1 tablespoon of rice wine alcohol
  • 1 teaspoon of glutenfree soy sauce
  • 1 tablespoon of sesame oil
  • A sprinkling of roasted sesame seeds, for garnishing
  • 1 tablespoon of vegetable oil, for frying
  • 250g minced beef / beef strips

Marinade for beef:

  • 1 teaspoon of cornstarch
  • 1 tablespoon of gluten-free soy sauce

 

Instructions:

  1. Place the beef into a bowl
  2. Add the marinade ~ 1 teaspoon of cornstarch, 1 tablespoon of gluten-free soy sauce
  3. Mix with a fork until combined
  4. Leave to stand in the refrigerator whilst preparing the other ingredients
  5. Wash and thinly slice vegetables
  6. In a wok (or large frying pan), place the onion, garlic and ginger
  7. Fry on medium-low heat until tender (just a few minutes, do not overcook)
  8. Remove beef from refrigerator and add to the wok
  9. Fry gently until browned, but not overcooked
  10. Add the cumin powder and stir
  11. Next, add the corn and sweet pepper
  12. Add the liquid stock and stir
  13. Cover with a lid and gently simmer for about 5 minutes, until the corn is tender
  14. Remove the lid and turn up the heat
  15. Pour in the sesame oil, additional soy sauce and alcohol
  16. Stir
  17. Turn off the heat and sprinkle with roasted sesame seeds
  18. Serve with a bowl of  warm rice
  19. Enjoy!
