New Recipe: Gluten-free & Dairy free Creamy Mushroom Pasta

Looking for lighter, yet still tasty meals? This delicious creamy mushroom pasta recipe is quick and easy; doesn’t require an oven, and takes very little time in the kitchen.

Gluten-free & Dairy free Creamy Mushroom Pasta

 

Ingredients:

  • A punnet of button mushrooms
  • 1Β  small sweet bell pepper (any colour)
  • 2 tablespoons olive oil
  • sea salt and black pepper for seasoning
  • 1/2 teaspoon dried herbs for seasoning
  • 1/2 cup canned coconut cream
  • Your favourite gluten-free pasta
  • Your favourite gluten-free vinegar / balsamic vinegar

 

Instructions:

  1. Rinse the mushrooms, peppers and slice
  2. Heat 2 tablespoons of olive oil in a non-stick frying pan on medium heat
  3. Place mushrooms and peppers into the pan and fry gently until tender
  4. Add seasoning and stir
  5. Once the mushrooms have browned, add the coconut cream and turn heat to low
  6. Stir and simmer for about 1 – 2 minutes
  7. Once the sauce is creamy, remove from heat
  8. Cook pasta according to directions of the pack
  9. Drain pasta and add to two serving bowls
  10. Divide the mushrooms between the two bowls
  11. Lightly drizzle with your favourite vinegar
  12. Serve and enjoy!
