New Recipe: Mango & Blueberry Galette

Open pies are really easy to make, once you get the hang of it – best of all, they do not need to look ‘perfect’ to be beautiful!

You can also play around with flavours and colours.

What you’ll need:

  1.  Your favourite gluten-free pie recipe
  2.  Almonds, roughly chopped
  3.  1 small mango, peeled and sliced
  4.  A handful (or more) of ripe fresh blueberries
  5.  Sugar (or other sweetener)
  6.  Vanilla pod (or powder)
  7.  Parchment paper (wax paper)
  8.  An oven

Cooking time: 20-25 minutes

 Mango & Blueberry Galette

  • Ready-made gluten-free pie dough/pastry
  • A handful of ripe blueberries, rinsed
  • 1 small mango, peeled and sliced
  • 1/4 cup of raw almonds, roughly chopped
  • 1 vanilla pod / vanilla powder
  • 2 tablespoons of sugar  / sugar alternative


  1. Preheat an oven to 160C/320F
  2. Place the sugar, vanilla and blueberries into a small bowl
  3. Stir and set aside
  4. Peel and slice the mango
  5. Roll out the gluten-free pie dough/pastry onto wax paper
  6. Sprinkle with the roughly chopped almonds
  7. Spoon the blueberries onto the centre of the dough
  8. Place the mango slices around the outside of the blueberry circle
  9. Using the wax paper/parchment, gently fold up the sides, but do not cover the fruit entirely
  10. Place onto a baking tray
  11. Place into the centre of the preheated oven
  12. Bake for 20-25 minutes, until the crust is browned
  13. Remove from the oven and let cool on a wire rack
  14. Serve with cream, ice-cream, or plain
  15. Enjoy!
