Gluten-free Recipe: Paddy’s Potato Side Dish

This is such a simple and easy side dish to make, to enjoy along with either a variety of vegetarian dishes; with a chicken or beef dish; or even just enjoyed on its own.

Paddy’s Potato Side Dish

Serves: 2

Prep time: 10 minutes

Cooking time: 20-25 minutes

Ingredients:

  • 2 large potatoes, peeled
  • fresh parsley, chopped
  • sea salt and ground black pepper
  • olive oil

 

Directions:

  1. Bring a half a pot of water to boil
  2. Gently place the chopped potatoes into the pot
  3. Simmer until tender, but not too soft
  4. Carefully drain the water from the pot
  5. Place the cooked potatoes into a serving bowl
  6. Drizzle olive oil over
  7. Season with salt and pepper
  8. Add the chopped parsley and gently toss
  9. Serve immediately or cool
  10. Add a vinegary dressing and enjoy!
