1st Gluten-free Recipe of the New Year!

What better way to warm up the kitchen, than with comforting gluten-free food…

Chicken Casserole

(gluten-free, dairy free, egg free, sesame free, wheat free, nut free, soy free)

Prep time: 15 minutes

Cooking time: about 1 hour

Oven temperature: 200C

 

Ingredients:

  • 1/2 a chicken cut in half, or smaller
  • 2 large carrots, roughly chopped
  • 1 large red onion, roughly cut
  • 1/4 butternut, cut into large pieces
  • 250g long green beans (add later)
  • 3 cups of liquid stock
  • Your favourite herbs and spices
  • Salt and peppercorns for seasoning

 

Directions:

  1. Preheat the oven to 200C
  2. Roughly cut up the vegetables
  3. Place the onion at the bottom of a Pyrex or deep ovenproof dish
  4. Place chicken pieces on top
  5. Add the carrots and butternut, but NOT the green beans
  6. Season
  7. Pour over the stock
  8. Cover with a lid and place into a preheated oven, on 200C
  9. Cook covered for about 45 minutes
  10. Now add the green beans and cook for a further 15 minutes
  11. If you like the chicken pieces browned, uncover and leave in for an extra ten minutes, but check frequently to prevent burning
  12. Carefully remove from the oven and serve on a bed of rice
  13. Enjoy!
