Oven roasted gluten-free vegies

I’ve left this recipe for last this month, as it is starting to become chilly, and this dish does require some oven time. So, if your kitchen is no longer as hot as a tarred road, then you may want to get stuck into the kitchen and start cooking.

Gluten-free Oven Roasted Vegetables

(gluten-free, egg free, wheat free, sugar free, dairy free, soy free)


Servings: 2-4

Prep time: 10-15 minutes

Cooking time: 35-50 minutes



  • 2 Purple sweet potatoes
  • 1 small Butternut
  • 2 /3 medium sized Potatoes
  • 2 Yellow sweet potatoes
  • 2 medium sized Carrots
  • Fresh or dried rosemary
  • Sea salt and black pepper for seasoning
  • Olive oil



  1. Peel and wash all the vegetables
  2. Chop up into bite-sized pieces
  3. Preheat an oven to 190C
  4. Bring a large pot of water to a boil
  5. Par-boil the vegetables (not the carrots) for a few minutes (between 3- 5 minutes)
  6. Drain and place vegetables, including the carrots into a baking tray. Add the rosemary
  7. Season with sea salt and black pepper
  8. Drizzle olive oil over the vegetables to coat, but do not drench in oil
  9. Place the baking tray into the pre-heated oven
  10. Bake uncovered on 190C for 30-50 minutes, until the vegetables are tender
  11. If you prefer crispy vegetables, leave in for longer
  12. Remove from oven and serve
