What do you do when you have an abundance of tomatoes that are ripening far too quickly in the summer heat?
You roast them, of course! Rather than just slicing up fresh tomatoes and adding them to your favourite salad or pasta dishes, why not add roasted tomatoes? This is such a simple, yet delicious way to enjoy those plump cherry tomatoes, (or any others for that matter).
They do not take long at all to cook, and if you will be using the oven to cook any other dishes, then pop these in at the same time, to save on energy, and avoid over-heating the steamy kitchen.
Roast Cherry Tomatoes
(gluten-free, egg free, sugar free, dairy free, nut free, oat free, wheat free)
Enjoy these delicious and plump roasted tomatoes with a salad; served with pasta; spread on bread; made into a dip or even used as a sauce for a pizza!
- 200g of cherry tomatoes
- 2 – 3 tablespoons of olive oil
- sea salt for seasoning
- Preheat an oven to 160C
- Wash the cherry tomatoes
- Place into an oven proof dish
- Drizzle with olive oil
- Sprinkle with sea salt and toss them around to coat in the oil
- Place the dish into the oven and cook on 160C for 20 – 25 minutes
- Remove from oven and enjoy!
Note: once roasted, these tomatoes can also be frozen for use in casseroles or pasta dishes.
