Summer Peach Crumble for Father’s Day!

Depending on where you are from, you either love a crisp or a crumble.  Either way, these easy tarts/pies are delicious; usually easy to make; and a great way to use up very ripe summer fruit.

Why not spoil the Dad in your life, and bake up this wonderful gluten-free peach crumble.

These do require a little baking, so you will need to turn your oven on this summer, but fortunately not for too long!


Father’s Day Peach Crumble

(gluten-free, egg free, soy free, oat free, wheat free, vegetarian)

Servings:  4-6

Prep time: 15 minutes

Cooking time: 30-40 minutes



  • 4  ripe peaches
  • 1/4 cup of brown sugar
  • Juice of 1 small lemon
  • 1 teaspoon of vanilla extract (or almond extract)
  • 1/4 teaspoon of sea salt
  • 1/4 teaspoon of ground cinnamon
  • 1/8 teaspoon of ginger powder
  • 2 tablespoons of corn starch
  • 6 tablespoons of brown rice flour
  • 2 Tablespoons of white sugar
  • 2 tablespoons of buckwheat flour
  • 1 tablespoon of nut flour (almond, hazelnut or pistachio)
  • 2  tablespoons of butter



  1. Wash the peaches
  2. Blanch the peaches in a pot of boiling water for 2 minutes
  3. Remove and drain
  4. When cool, remove the skins and cut up
  5. Place into a bowl
  6. Add the vanilla extract, salt, spices, lemon juice, brown sugar  and corn starch and gently stir
  7. Set aside
  8. Preheat oven to 180C
  9. Make the crumble:
  10. In a separate bowl, place the brown rice flour, nut flour, buckwheat flour and sugar
  11. Mix
  12. Using your hands, or a fork, mix in the butter until the flour mixture is crumby
  13. Place the peaches, with the sauce into an ovenproof pie plate
  14. Spoon the crumble over the top
  15. Bake on 180C for 30-40 minutes until browned
  16. Remove from oven, cool slightly and serve
