Gluten-free Drunken Drummies

I often cook chicken, as you will see from the recipe index. Chicken is one of those meats that is very versatile.  Depending on the recipe, it cooks reasonably quickly; and is great as a snack or main dish.

This recipe uses red wine as both a tenderiser and to add a lovely flavour to the drumsticks.

Gluten-free Drunken Drummies

(free of: gluten, dairy, nuts, oats, wheat, soy, sesame)

 

Servings:  2 – 4

Prep time: 10 minutes

Cooking time: 35-40 minutes

 

Ingredients:

  • 500g of chicken drumsticks

Marinade:

  • 1/4 cup of red wine (I used Cabernet Sauvignon)
  • 1 Tablespoon of Worcestershire sauce
  • 1 Tablespoon of olive oil
  • 1 teaspoon of dark brown sugar
  • 2 Tablespoons of tomato paste
  • 1 teaspoon of sea salt
  • 1 teaspoon of ground black pepper
  • 1/2 teaspoon of mixed herbs

Instructions:

  1. Rinse the drumsticks under running water
  2. Drain
  3. Place all of the marinade ingredients (above) into a measuring jug or bowl, and stir
  4. Arrange the drumsticks in an ovenproof baking tray/dish
  5. Pour the marinade over and leave in a refrigerator overnight or for at least two hours
  6. Remove from refrigerator
  7. Preheat an oven to 180C
  8. Place the tray/dish into the oven once heated up
  9. Bake for 25 minutes, turning the drumsticks over twice during this time
  10. Turn the temperature up to 200C and brown
  11. Watch the drumsticks during this time, as they can easily burn
  12. Remove from the oven once browned
  13. Serve immediately
