I often cook chicken, as you will see from the recipe index. Chicken is one of those meats that is very versatile. Depending on the recipe, it cooks reasonably quickly; and is great as a snack or main dish.
This recipe uses red wine as both a tenderiser and to add a lovely flavour to the drumsticks.
Gluten-free Drunken Drummies
(free of: gluten, dairy, nuts, oats, wheat, soy, sesame)
Servings: 2 – 4

Prep time: 10 minutes
Cooking time: 35-40 minutes
Ingredients:
- 500g of chicken drumsticks
Marinade:
- 1/4 cup of red wine (I used Cabernet Sauvignon)
- 1 Tablespoon of Worcestershire sauce
- 1 Tablespoon of olive oil
- 1 teaspoon of dark brown sugar
- 2 Tablespoons of tomato paste
- 1 teaspoon of sea salt
- 1 teaspoon of ground black pepper
- 1/2 teaspoon of mixed herbs
Instructions:
- Rinse the drumsticks under running water
- Drain
- Place all of the marinade ingredients (above) into a measuring jug or bowl, and stir
- Arrange the drumsticks in an ovenproof baking tray/dish
- Pour the marinade over and leave in a refrigerator overnight or for at least two hours
- Remove from refrigerator
- Preheat an oven to 180C
- Place the tray/dish into the oven once heated up
- Bake for 25 minutes, turning the drumsticks over twice during this time
- Turn the temperature up to 200C and brown
- Watch the drumsticks during this time, as they can easily burn
- Remove from the oven once browned
- Serve immediately
