Okay, so you’ve taken the time to bake a whole pumpkin or butternut, and now the question is ‘What do I do with all of this tasty orange flesh?!’
Depending on what your tastes are, there are quite a few ways in which to make the most of the freshly baked pumpkin.
I wait for the pumpkins/butternuts to cool down, then use a spoon and scoop out the flesh. It is easily done.
I then place it into a blender, and pulse it until a thick and creamy puree is formed. It only takes a few very short minutes, and you’re all done. You could also just use a potato masher, if you like the flesh more solid and not in liquid form.

- Pumpkin cupcakes
- Pumpkin bread
- Pumpkin soup
- Pumpkin brownies and
- Pumpkin muffins

Yum. I make pumpkin soup quite often but I’ve also used it in place of the milk and flour mixture in Mac and Cheese. A healthier version. Particularly when I use a mixture of potato and pumpkin cooked in broth with onion (basically, let’s be real, I use the pumpkin soup in with the pasta) 😋😋 YUM!

Yay! It’s delicious. So creamy and with no flour! Oh I do add a little cream (maybe – tbsp) and some cheese on top of course! Wouldn’t be Mac and cheese without cheese!
