Gluten-free Fragrant Butternut

The chill in the air in the early mornings and evenings means that it is now squash and pumpkin season.  All too soon it will be Halloween, and then … Christmas!

Here is the first of my butternut recipes for the season.  Quick and easy to make, with no oven required, and you can spice it up any way you like.  Enjoy!

Servings: 2-4

Prep time: 8 minutes

Cooking time: 10 minutes

ingredients:

  • 200g of butternut
  • 2 fresh garlic cloves
  • A knob of fresh ginger
  • 1 teaspoon of prickly ash (or peppercorns)
  • 1 teaspoon of cumin or fennel seeds
  • Sea salt
  • 2 Tablespoons of olive oil
  • 1/4 cup of water or stock

instructions:

  1. Wash and peel the butternut
  2. Remove the seeds and cut into bite sized pieces
  3. Peel and chop the garlic and ginger
  4. In a pan or wok, heat the olive oil on medium high
  5. Add the garlic, ginger and cumin (or fennel) seeds and fry until the seeds jump around in the pan
  6. Now add the butternut
  7. Season with salt and stir
  8. Add a quarter cup of water or stock and cover with a lid
  9. Simmer, covered until cooked (about 5-8 minutes)
  10. Remove from pan and serve
