Gluten-free Colourful Chicken Fried Rice

I know that nowadays, many people are steering away from beef, pork and chicken, and eating a mostly fish, or plant based diet.  However, since chicken is a lighter meat, and so versatile, I do have lots of recipes which include it.

It’s back to school, and schedules are once again hectic! If you don’t have much time to spend in the kitchen, then you’ll love this recipe. This is perfect for a busy weeknight meal, and doesn’t involve the oven.

I’ve only spent a short time in the kitchen, making this very simple, quick and easy fried rice.

Colourful chicken Fried Rice

(gluten free, egg free, nut free, corn free, dairy free, sugar free, allergy friendly)


Servings: 2-4

Prep time: 10 minutes

Cooking time: 15-20 minutes


  • 4 chicken fillets, skinless, deboned, diced
  • 1 fresh garlic clove, chopped
  • 1 small knob of fresh ginger, chopped
  • 1 medium – large carrot, diced
  • 100g of green leafy veg (I used small spinach leaves)
  • 2 Tablespoons of cooking oil
  • Sea salt for seasoning
  • Spices (your favourites)
  • 1 bowl of cold, precooked white rice

  1. Peel and chop the carrot
  2. Wash the green leafy vegetable well, and chop
  3. Chop up the garlic and ginger
  4. Rinse the chicken fillets under running water
  5. Cut into bite sized pieces
  6. Set aside
  7. Heat the cooking oil in a frying pan, or wok
  8. Add the garlic and ginger and fry for about 30 seconds
  9. Next, add the diced chicken and fry on medium high heat until almost done (depending on the thickness of the chicken, it should take 8-10 minutes)
  10. Add the carrots, stir  and continue to fry
  11. Next, add the rice and quickly stir to break it up
  12. Add a little water, to prevent sticking
  13. Finally, add the leafy green vegetable and fry for about two minutes (do not overcook)
  14. Remove from the pan/wok and serve immediately
