Gluten-free No Bake Cookie Crumble Apple Pie

If you still don’t want to turn on your oven because it’s too hot to bake in the kitchen, then this is the perfect recipe for you!

You will need only a short time in the kitchen, to whip up a tasty dessert (or breakfast) that tastes soooo lekker!

 Cookie Crumble Apple Pie

(gluten-free, egg free, allergy friendly, oat free, soy free, nut free)

Servings: 1-2

Prep time: 5 minutes

Cooking time: 10-15 minutes

ingredients:

  • 50-60g ready baked butter cookies, or store bought
  • 2 small apples, peeled, cored and diced (240g)
  • 1 – 2 Tablespoons of dark brown sugar
  • a pinch of salt
  • a dash of cinnamon (omit if you wish)
  • 1 teaspoon of vanilla essence
  • 1 1/2 Tablespoons of butter
  • 1 teaspoon of lemon juice

instructions:

  1. Wash, peel and dice apples
  2. Set aside
  3. In a saucepan, or pot, place the butter and melt over low heat
  4. Add the apples and gently stir
  5. Add the dark brown sugar and stir
  6. Add the salt, cinnamon and lemon juice and stir quickly
  7. Cook on a low heat, until the apples are soft
  8. Remove from the pan/pot and place into a serving dish

Assembling:

  1. Crush the butter cookies with a rolling pin, or in a blender
  2. Once the apples are cooked, remove from the heat and spoon into serving bowls
  3. Sprinkle the crushed cookies on top
  4. Serve with ice-cream, or cream. Enjoy!
