Summer Salsa

Hmmm….summer! The heat; social barbeques; the sun and sea; time off (for some); longer days, butterflies and cicadas;  light, fresh and healthy meals. If this too is what you enjoy about summer, then you’ll love this Salsa recipe. It goes so well with a barbeque, or any other meal.  It’s light, tasty, and colourful. Best of all, you don’t need to spend too much time in the kitchen making this lekker dish!

Watermelon and Mango Salsa

(gluten free, egg free, soy free, dairy free, nut free, corn free, allergy friendly) summersalsa

Servings: 2-4

  • 1/4 seedless watermelon
  • 1 ripe mango
  • A small bunch of coriander leaves
  • Sea salt to season
  • 1 teaspoon of chili powder or favourite spice
  • A sprinkling of sunflower seeds
  • 2 Tablespoons of olive oil
  • Fresh lemon juice (half to one lemon)

  1. Peel a mango, and slice into small pieces
  2. Cut up the watermelon, (or you can use a melon baller for round shapes)
  3. Finely chop the coriander
  4. Add the fruit and coriander to a bowl
  5. Season with salt and spice
  6. Squeeze half a lemon to a whole lemon (depending on your taste) into the bowl
  7. Drizzle 1 -2 tablespoons of olive oil over and gently toss
  8. Sprinkle sunflower seeds on top
  9. Serve immediately, or refrigerate until needed
