Chicken, Abalone Mushrooms & Broccoli – One Wok Meal

As spring is nearing, most days are brighter, warmer, and sunnier.

This is another 1-Wok meal. There are so many different types of mushrooms, and although I have not cooked all of them, I have certainly tried a variety of them.  Which is your favourite?

For this recipe, I’ve used Abalone mushrooms. They do not break up when cooked, and the colour and shape is pretty. I’ve paired them with broccoli, and added chicken. You could make this a vegetarian dish, by just leaving out the meat.

Cooking time: 15-20 minutes

ingredients:

  • 250g of Abalone mushrooms
  • 1 head of broccoli
  • 2 fresh garlic cloves
  • 1 knob of fresh ginger
  • 2 chicken breasts, skinless, boneless
  • 1 teaspoon of prickly ash
  • 1 teaspoon of mushroom powder
  • 1 teaspoon of salt
  • 1 Tablespoon of sunflower oil
  • 1 teaspoon of Soy sauce

8 – Cover and simmer

Instructions:

  1. Wash and cut up broccoli, ginger, garlic and mushrooms
  2. Rinse the two chicken breasts under running water
  3. Chop into bite sized pieces
  4. Heat one tablespoon of oil in a pan or wok
  5. Place the chicken into the pan/wok and fry on medium heat
  6. Add the garlic and ginger and fry for about 30 seconds
  7. Now add the prickly ash
  8. Continue to fry the chicken pieces until browned
  9. Add the broccoli pieces, mushroom powder and about a quarter cup of filtered water
  10. Mix well, turn the heat down to low and simmer uncovered for about 3 minutes
  11. When the broccoli is tender, but not mushy, add the mushrooms and soy sauce
  12. Cover with a lid and continue to simmer for another 3-5 minutes, until cooked through
  13. Remove the lid and serve

Serve with a bowl of steamed rice
