First Recipe of the New Year

To start off 2015, I made a really simple meal, but oh, so tasty!  Using simple ingredients, this marinade goes so well with beef, lamb, fish, chicken and even potatoes.  Happy New Year!

Oven-baked Creamy Chicken (gluten free, egg free, soy free, corn free, nut free)

Servings: 2-4

Prep time: 1 hour (minimum)

Cooking time: 40 – 60 minutes



  • 250g of chicken drumsticks (or any other portions)
  • Salt for seasoning
  • 1/4 cup of whole grain mustard (always check that it is gluten-free)
  • 1/2 cup of plain yoghurt
  • 1 Tablespoon of honey


Mustard Marinade

  1. In a bowl, place the mustard and yoghurt and mix with a spoon
  2. Add the honey and mix well


  1. Wash the chicken pieces and place into an ovenproof dish
  2. Season with salt
  3. Pour the mustard marinade over
  4. Marinade in the refrigerator for one hour to overnight (depending on how much time you have)

Cooking Instructions:

  1. Remove from refrigerator
  2. Preheat an oven to 180C/355F
  3. Cover the ovenproof dish with tin foil
  4. Bake in the preheated oven, on 180C/355F for 50 – 60 minutes, until tender and thoroughly cooked
  5. Remove from oven
  6. Carefully remove the tin foil and serve

Note: If you do not have an oven, marinade the chicken and then place into a pan, and cook on the stove. Simmer on medium-low heat for 35-45 minutes, until the chicken is cooked through and tender.
