One Pot Meal – Chicken & Mushroom

Quick and Easy! That’s exactly what One Pot Meals are supposed to be, aren’t they? Over the holidays, you may have time off from work, but still find that you’re rushing around with your family; or if you’re still working, don’t have much time to spend in the kitchen, whipping up amazing, time consuming meals. This meal is really good, and healthy, but only takes a short time to prepare and cook, and it’s all done in one pot. No fuss, or extra dishes to wash! It’s tasty, naturally gluten free, and so easy to make!

Chicken & Mushroom One Pot Meal (gluten free, egg free, dairy free, soy free, nut free, oat free, corn free)



  • 2 garlic cloves, peeled and chopped
  • 250g of boneless, skinless, chicken breast, cut up
  • 500g white button mushrooms, sliced
  • 1 Tablespoon of olive oil, for frying
  • Sea salt and pepper
  • 1/2 teaspoon of mixed dried herbs
  • 1/4 cup of liquid chicken stock
  • 1 cup of green leafy veg (I used baby spinach leaves)

  1. Rinse chicken under running water, and chop into bite sized pieces
  2. Wash and slice the mushrooms
  3. Wash green leafy veg, and set aside
  4. Peel and chop garlic cloves
  5. In a medium sized pot (or pan), fry the garlic and chicken in one tablespoon of olive oil, on medium heat, until the chicken is browned, for about 5-10 minutes
  6. Add the salt, pepper and dried herbs, and stir
  7. Next, add the sliced mushrooms and continue to fry, for 3-5 minutes, until the mushrooms change colour and release liquid
  8. Now add the chicken stock (or vegetable stock), and simmer for 5 minutes
  9. Place the green leafy veg on top, and gently stir in
  10. Immediately remove from heat and serve
  11. Serve on a bed of rice, and garnish with coriander, or any way you like
