Twelve Days of Christmas – Day 4

It’s getting closer to Christmas, and the weather is getting colder! Will it be a white Christmas for you? Probably not here, but it’s icy out there, so I’d much rather be inside my kitchen, baking and cooking!

Warm Broccoli & Cauliflower Salad (gluten free, egg free, dairy free, sugar free, oat free, corn free, soy free)

Warm Broccoli & Cauliflower Salad
Ingredients:
  • One floret of broccoli, cut up
  • One floret of cauliflower, cut up
  • ½ sweet red bell pepper, sliced
  • A pinch of sea salt and ground pepper
  • 1 teaspoon of spices of your choice (try chilli powder, curry, herbs)
  • 2 cloves of garlic, chopped
  • 1-3 Tablespoons of fresh ginger, chopped (depends on how much you prefer)
  • 2 Tablespoons of olive oil
  • ¼ cup of slivered almonds
  • 1 teaspoon of white vinegar
1 -  Ingredients 2 - Chop vegetables 3 - Blanch broccoli and cauliflower 4 - Remove from water 5 - Olive oil, salt, spice 6 - Fry garlic, ginger  7 - Add the vegetables 8 - Stir in the spice 9 - Serve in a large dish

Directions:
1. Wash and cut up broccoli, cauliflower and red pepper
2. Chop garlic and ginger
3. Heat up a pot full of filtered water to boiling point
4. Once boiling, gently place the broccoli and cauliflower into the water
5. Leave for about a minute and remove. Set aside
6. In a pan or wok, heat up the olive oil on medium heat
7. Add the ginger and garlic and fry for a few seconds
8. Now add the slivered almonds and fry for about a minute on medium-low heat
9. Toss in the broccoli and cauliflower
10. Continue frying for about 3-5 minutes, until the vegetables are al dente
11. Next add the salt, spices and the vinegar, and cover with a lid
12. Add a tablespoon of filtered water if the vegetables start to stick to the pan
13. Add the red peppers and stir
14. Remove from heat and spoon into a serving bowl
15. Serve immediately
Optional: crumble feta, (or non dairy) cheese over the vegetables just before serving
