Vegies Box. Recipe No.3

Eat your greens!

With the colder weather, salads are taking the back seat until next summer! I’ll be doing a lot of frying, baking, steaming and boiling this winter, so if you live in the southern hemisphere, enjoy munching on your salads!

This is a double dose of green goodness! Broccoli and Bok Choy. They are so quick and easy to prepare, and also very versatile. For these two dishes, all I did was wash, cut and fry. Bok Choy wilts very quickly, so once it’s cooked, serve immediately to enjoy its tenderness.

Broccoli & Almonds (naturally gluten free, egg free, dairy free, sugar free, oat free, corn free, soy free, NOT nut free, vegetarian)

Serves: 2

Ingredients:

  • One floret of broccoli
  • 1/4 cup of almond slivers
  • Fresh garlic, sliced
  • Fresh ginger, sliced
  • Salt and pepper, to taste
  • Sunflower oil, for frying
  • 1 teaspoon of baking soda (for soaking)
  • 1/4 cup of filtered water, for cooking
  • 1 teaspoon of dark vinegar
  • 1 teaspoon of soy sauce

 

Directions:

  1. Cut the broccoli up into smaller pieces, place into a bowl, cover with filtered water with a teaspoon of baking soda and let stand for 5-10 minutes
  2. Drain and rinse thoroughly
  3. Chop the garlic and ginger
  4. In a wok or pan, heat one tablespoon of sunflower oil (or other cooking oil/coconut oil)
  5. Fry the garlic, ginger and almonds for about a minute
  6. Place the chopped broccoli in the wok/pan and fry on medium heat
  7. Add a little salt and ground pepper (to your preference)
  8. Add a quarter cup of filtered water and cover
  9. Simmer for about 3-5 minutes, with lid on
  10. Remove lid, stir in one teaspoon of vinegar, and one teaspoon of soy sauce
  11. Remove from heat and serve

Asian Style Baby Bok Choy (naturally gluten free, egg free, dairy free, nut free, sugar free, soy free, vegetarian)

Ingredients:

  • About 200g of bok choy (you can use more)
  • Fresh garlic, chopped
  • Fresh ginger, chopped
  • Sunflower oil, for frying

 

Directions:

  1. Thoroughly wash the baby bok choy, trim the bottom, and cut in half, lengthways
  2. Rinse under running water and drain
  3. Chop the garlic and ginger
  4. In a wok, or pan, heat a tablespoon of sunflower oil (or other cooking oil), on high heat
  5. The oil will start to shimmer, then it is hot enough
  6. Quickly, but carefully, toss the garlic and ginger into the pan and fry for about 30 seconds
  7. Next, carefully place the bok choy into the wok/pan and stir
  8. Season with salt (to your preference)
  9. Do not turn the heat down, but continue to fry, stirring frequently, for about 1-2 minutes (they really don’t need long to cook)
  10. Once the bok choy is tender, but not over cooked, remove from the wok/pan and serve immediately
